Based on our discussion of "Conversations" we know why we bet. The next question is what do we bet? The purpose of performance poker is to make money. We do that by balancing risk and reward. By only playing 19 hands we significantly reduce our risk of being beat when we make a hand. We don't eliminate it, but we do reduce it. However, we also reduce our potential reward; because, we play less hands. If we played more hands preflop, say 25 then we would have more chances of hitting some funky flops and winning some money, or we might win with top pair with KT (which we don't play). You see how this balancing act works? 19 hand Performance poker is weighted toward less risk preflop and on the flop, and more risk on the turn and river. I'll show you how through the betting.
Let me say that again.
19 hand Performance Poker is weighted toward less risk preflop and on the flop, and more risk on the turn and river.
We can't put everything on here because it's all in the book. Publishers are picky about giving away the store... it sucks..:

These hands are true nut hands, but they are nut hands for our purposes.
For instance, a flopped set may be beat by a larger set. An ace high flush may be beat by a full house or straight flush or quads. A top end straight may be beat by a better straight. If you have TJ and the board is 789 then you have a nut hand. If the turn is a T and someone else has JQ, then you could lose. If someone made a set and the turn pairs the board, you could lose.
What I'm saying is that most of what people call "nut" hands aren't truly unbeatable. But for Performance Poker we are going to treat them as unbeatable until there is overwhelming evidence to the contrary.
